which is the best OS for a dedicated MySql Server?

Hello,
i’m setupping a MySql machine, on this server:

2x Quad Core 2.0ghz (8cores)
8Gb RAM
2x 140Gb SAS drives in Raid 1

i have to chose the BEST OS and the best configuration for my.cnf and for the server.
- which is the best software? CentOS? Ubuntu server? Fedora?
- where can i find a guide on what to install / disable on that machine?
- which is the best my.cnf configuration?
